Yogurt Starter

FT offers a unique variety of yogurt starter cultures; our yogurt starter cultures include the traditional, Scandinavian yogurt or fermented milk cultures: Viili, Fil Mjolk, Piima as well as traditional, Matsoni, a.k.a. Caspian Sea yogurt, traditional, Greek yogurt starter and traditional, cultured buttermilk starter. Traditional yogurt starter cultures are active, stable yogurt starters that retain their vigor after use and may be re-cultured continually without deteriorating the quality of the yogurt, if cultured weekly and otherwise taken care of. This makes making homemade yogurt easy on the budget, costing only a fraction of the cost of store-bought yogurt to make quality yogurt at home, minus additives, stabilizers and thickeners, using just fresh, wholesome pasteurized milk. FT yogurt and cultured buttermilk starters do not require a yogurt maker as they are re-cultured with cold pasteurized milk at room temperature for 12-18 hours. But if you prefer using a yogurt maker, try FT Greek yogurt starter for making delicious creamy, Greek style yogurt. Try them all: Viili, Fil Mjolk, Piima, Matsoni, a.k.a. Sourdough Starter

If you bake with commercial yeast, then you know it’s the yeast that’s responsible for the rich aroma and delectable taste of baked goods fresh out of the oven. So it is with sourdough bread. However, the yeast fungi contained in a sourdough bread starter is quite different from that of commercial yeast, a highly cultivated select strain of yeast that can only be used once that was developed for its specific taste and its ability to predictably rise. The difference is that a symbiotic relationship between wild yeast fungi and bacteria occurred at the creation of each sourdough starter, giving it unique characteristics and the ability to reproduce seemingly endlessly, if proper conditions prevail. It is also this unique relationship that distinguishes each sourdough bread starter from each other, giving each something different, such as the natural ability to become very sour or a tendency to rise very fast. It is these differences that make each sourdough starter that we offer truly distinctive. Water Kefir Crystals

Water Kefir Crystals “water kefir grains” is a consortium of active yeast and bacteria in symbiotic relationship housed in gelatinous white grains, comparable to gelatinous lichen that has the incredible ability, as it propagates, to transform sweetened water and dried fruit into a slightly acidic carbonated beverage. The bacteria present in the water kefir grains secrete lactic acid as it ferments the sweetened water producing a healthy lacto fermented beverage. The yeast present in the water kefir grains, imparts vitamins, minerals and enzymes as well as carbonation, which produces a delightful fizz but must be carefully controlled by refrigeration. Thanks to the water kefir crystals, healthy, homemade water kefir sodas (lacto fermented beverages) are easily produced and can be made in a wide variety of flavors.
