Greek Yogurt Shrikhand

Greek yogurt Shrikhand is an intriguing East Indian strained yogurt dessert seasoned with Saffron and Cardamom and topped with Pistachio nuts. Making homemade Shrikhand is remarkably easy and quite rewarding when looking for the perfect dessert for that special occasion. The secret behind making great tasting homemade Shrikhand is to begin with the best yogurt available. That’s why we recommend FT Greek yogurt starter culture for making Greek yogurt. It produces especially thick, smooth and creamy yogurt, just the way good Greek yogurt ought to be. And, it is cost effective, does not deteriorate when re-cultured, making it possible to make homemade Shrikhand on many special occasions from just one packet of yogurt starter. To make Shrikhand first prepare yogurt according to instructions from Fermented Treasures, use one part heavy whipping cream to three parts whole milk.

Greek Yogurt Shrikhand

One quart (960 ml) of Greek yogurt, strain
Several strains of saffron
Dash (0,8 ml) ground cardamom
¼ cup (60 ml) of powdered sugar
1 tbsp. (15 ml) lukewarm milk
Slivered pistachios
Vanilla sugar wafers
Sliced fresh strawberries

Strain yogurt in the refrigerator overnight in a yogurt cheese strainer or place yogurt in a strainer lined with a muslin cloth set over deep bowel. Tie corners of the muslin cloth together. Let drip overnight until dripping stops. Pour off whey as needed to avoid contact with strainer. Crumble Saffron into warmed milk. Stir into strained yogurt. Stir in Cardamom and powdered sugar. Mixture should be thick and creamy. Spoon into individual serving dishes, cover and chill for several hours before serving. Garnish with slivered pistachios, vanilla sugar wafers and sliced fresh strawberries. Serves 4.

Some nice variations on Shrikhand yogurt

Lemon-Vanilla Shrikhand

One quart (960 ml) of Greek yogurt, strain
¼ cup (60 ml) of powdered sugar
One tsp. (5 ml) lemon extract
One tsp. (5 ml) vanilla extract
Fine cut lemon peel
Vanilla wafers

Sprinkle Shrikhand with fine cut lemon peel. Garnish with vanilla wafers.

Orange-Vanilla Shrikhand

One quart (960 ml) of Greek yogurt, strain
¼ cup (60 ml) of powdered sugar
One tsp. (5 ml) orange extract
One tsp. (5 ml) vanilla extract
Fine cut orange peel
Vanilla wafers

Sprinkle Shrikhand with fine cut orange peel. Garnish with vanilla wafers.

Bourbon-Vanilla Shrikhand

One quart (960 ml) of Greek yogurt, strain
¼ cup (60 ml) of powdered sugar
One tsp. (5 ml) vanilla extract
One tbsp. (15 ml) Bourbon whisky
Fine cut orange peel or,
Shaved Dark Chocolate
Vanilla wafers

Sprinkle Shrikhand with fine cut orange peel or shaved dark chocolate. Garnish with vanilla wafers.
