Greek yogurt Chocolate Mousse Recipe

Greek Yogurt
Chocolate Mousse
1.5 oz (45 g) Unsweetened Baker’s Chocolate
1 oz (30 g) Sweet Chocolate (Baker's-German's brand)
5 Egg Yolks
¾ cup (180 ml) Sugar
½ tsp (2,5 ml) Vanilla extract
4 Egg Whites
2 ½ cups (600 ml) of thick Greek yogurt.
Instructions:
Melt Sweet and Unsweetened Chocolate in top of double boiler in simmering water, Remove from water: cool. In medium sized bowl, beat egg yolks with ½ cup (120 ml) of sugar until light and thick. Beat in cooled chocolate: stir in vanilla extract. Beat egg whites until foamy white and doubled in volume. Beat in remaining sugar one tablespoon (15 ml) at a time until egg whites stand in stiff peaks. Beat ¼ cup (60 ml) of egg whites into chocolate mixture; Fold in Greek yogurt and remaining egg whites until no streaks remain. Spoon into an 8-cup (1920 ml) serving dish; Chill 2-3 hours before serving. Garnish with shaved chocolate.
