Ways to use our yogurt starter cultures are endless, but here are a few good yogurt recipes to start you off making delicious food with homemade yogurt.
Viili Cheesecake
Ingredients:
3 ounces (90 g) cream cheese, softened
2 cups (375 ml) viili yogurt starter made with one part cream and three parts milk
One 3.4 ounce (96g) package vanilla instant pudding and pie filling
¼ tsp. (1,3 ml) teaspoon of lemon peel
¼ tsp. (1,3 ml) lemon juice
1 6-ounce (180g) ready-made graham cracker piecrust
Instructions:
Beat cream cheese in small bowl on medium speed until light and fluffy. Add viili yogurt and blend on low speed until well blended. Stir in lemon juice and lemon peel. Add dry pudding mix. Beat on medium speed until mixture mounds slightly. Spread in piecrust. Refrigerate until set, about 4 hours. If desired top with whipped cream.
Matsoni Custard Pancakes
Ingredients:
1/4 cup (65 ml) all purpose flour
1/2 cup (125 ml) matsoni yogurt starter
1 tablespoon (15 ml) butter, melted
3 eggs
1 tablespoon (15 ml) sugar
½ teaspoon (2,5 ml) vanilla extract
Instructions:
Preheat oven to 425 degrees (218 C). Melt butter in a 9" (22,5 cm) pie pan in oven. Keep pan in oven to stay hot.
Blend eggs, sugar, vanilla extract, and matsoni yogurt starter together in a blender; add flour to egg mixture and blend once more. Pour into buttered preheated pie pan. Bake 18 minutes. Pancake will rise and puff. Serve hot and top with your favorite topping such as powered sugar, whipping cream, or maple syrup.
Yield: 2-4 servings
Fil Mjolk Batter Bread
Ingredients:
2 cups (500 ml) all purpose flour
1 cup (250 ml) of Turbinado sugar
2 teaspoons (10 ml) baking powder
½ teaspoon (2,5 ml) baking soda
½ teaspoon (2,5 ml) salt
1 cup (250 ml) of fil mjolk yogurt starter
1/3 cup (85 ml) of butter
2 teaspoons (10 ml) vanilla extract
2 eggs, well beaten
Instructions:
Preheat oven to 350 degrees (176 C). (325 [163 C] if using glass). Grease and flour a 9 inch (22,5 cm) loaf pan,
Combine all of the ingredients in a large mixing bowl. Beat until well combined. Bake 45 to 55 minutes.
Fil Mjolk Cornbread Muffins
Ingredients:
1 cup all-purpose white flour
1 cup stone-ground yellow corn meal
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons butter, melted
1 to 4 tablespoons white sugar (optional)
2 large eggs
1 ½ cups Fil Mjolk yogurt starter
Instructions:
Preheat oven to 425 °F. Combine the dry ingredients. Mix the liquid ingredients and stir into the dry ingredients. Grease giant muffin tin and pour in the batter and bake for 25 minutes or until golden brown. Serve hot.
Variation: To the batter, add 1/2 cup each of grated Cheddar cheese and ½ cup sautéed onions.
Piima Orange Mousse
Ingredients:
4 eggs, separated
1 tablespoon (15 ml) unflavored gelatin
¼ cup (65 ml) cold water
2 cups (500 ml) piima yogurt starter
½ cup (125 ml) sugar
½ cup (125 ml) orange juice
2 tablespoons (30 ml) grated orange peel
Instructions:
Separate eggs. Soften gelatin in cold water, about 5 minutes. Combine egg yolks, piima yogurt starter and sugar in saucepan over low heat. Cook, stirring frequently, until thick and mixture coats a spoon. Remove from heat and add gelatin, orange juice, and orange peel. Let cool in the refrigerator until the mixture begins to congeal. Beat the egg whites until stiff and fold into the mixture. Spoon the mixture into a soufflé dish and refrigerate until ready to serve.
